Recipe of the day!

Today's recipe is a nice and healthy lunch. Great for a nice summer day with a glass of rose wine.

Walnut and Strawberry Chicken salad



Ingredients:
  • 2 cups diced chicken
  • 1/3 cup mayonnaise
  • 1 tablespoons sour cream
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon balsamic vinegar
  • 1 cup of sliced strawberries
  • 1 cup of sliced cherry tomatoes
  • 2 green onions,thinly sliced
  • 1/2 cup walnut pieces
  • 1/4 teaspoon salt
  • Pinch of pepper
  • 1 tablespoon lemon juice
  • Salad greens( your choice)
Preparation:

Mix the diced chicken with 1/3 cup mayonnaise, sour cream, olive oil,balsamic vinegar, sliced strawberries , sliced green onions, sliced cherry tomatoes, walnuts, salt, pepper, and lemon juice. Serve the chicken salad mixture on salad greens. Add more dressing as desired.
